Getting low resolution 600 dpi at 48 bit

Hello-
I am a newbie so please forgive the dumb question. I am scanning archival historic photographs. I am using silverfast AI which came bundled with my epson 10000 scanner. I want to scan at 16 bit color.
Does that trnslate into 48 bit on the silverfast menu? It is the only option on the menu that I see. Anything less goes to grayscale.
How can I tell on the tiff file that I save what the scan type is?
I have photoshop on order but in the meantime I am using Photoshop Elements, which supposedly does not work with 16 bits, yet it is opening up the scans Ihave done with Silverfast with no problem and allows me to edit them. However when I use the same size using the Epson software, elements will not allow any editing.
Why could it be that Elements is recognizing the silverfast scans at 8 bits?
