Colour negative film is promoted as an ideal film to scan because of its excellent exposure latitude compared to reversal film.

If one has an image with a wide tonal range, is it wiser to scan more than once? eg one scan for the highlights, another for the shadow regions? Or is the new Lasersoft software capable of capturing the full dynamic range with one scan?

The ability to scan the full range of tones is a function of the scanner NOT the software. If the scanner can extract the info SilverFast can process it!
