Tips to Optimize old black & white photos?

Hi.
Newbie here--just bought Epson 5450, installed the basic software, have done one scan.... & have not yet installed [I think] SilverFast SE. I'm using iBook [OS 9.1] w/Photoshop 5.5. I have some experience w/Photoshop but mostly w/color shots.
I'm about the business of scanning some very old b & w family photos for an exhibit--several of which I'd like to enlarge. I'm wondering if these old photos would be any better scanned if I used SilverFast or not. If so, I'd like to know which of its features I should use to enhance contrast, sharpen, etc.
And, if anyone can suggest how high to reasonably go on resolution, that'd help too.
Any tips or resources for this type of thing would be appreciated.
