How do the different shadow/highlight droppers differ??

Hi,
I have seen that on the top left control panel there are the Shadow/gray/highlight droppers and on the left side preview panel there is the small icon which also selects shadow and hilight in the preview image... but no gray.
How do the eye dropper controls at the top differ from the shadow/highlight controls on the side of the preview pane? Do the preview pane conrols automatically find the deepest shadow/brightest highlight areas of a previewed image?
Also, if one wants to make as linear a scan as possible for PP in Photoshop is it best to just back the deepest shadow from 0 to +10 or so and the brighest highlight from 255 to 245 and leave curves alone?
