After IT8 Calibration, White and Black Aren't Pure

I have an Epson 2450 scanner that I'm using with Silverfast Ai 6 and Photoshop 7. After calibrating with the Fuji IT8 target provided by Silverfast, I notice that the pure white and pure black elements on the IT8 target do not scan as pure white or black when I check the color values in Photoshop. I realize that they won't be perfect, but I would expect them to be a little bit closer. Here are the values within Photoshop:
White = R: 240, G: 244, B: 243
Black = R: 37, G: 37, B: 33
Is this normal? Or is there something else I can do to improve this?
