Getting Jaggies when scanning under 500dpi. Why, oh why?

Recently acquired Silverfast 6 for mac. Using a Saphir Ultra II. I am scanning 4x5 transparencies, but unless I scan at 500dpi or higher I get jagged edges. I am viewing at 100% in photoshop. Is this an algorithm problem, or something else?
