The Silverfast document that comes with the Silverfast SE software tells me that I can scan in Lab by doing the following.
16. Select the Colour Model
By pressing the ?command? key and clicking the ?Scan? button a pop-up
allows you to select the output colour model (PC users click with the right
mouse button on Scan RGB key): RGB, ColorSync, Cie-Lab, P&P CMYK.
After the selection is done, the scan button changes accordingly. Default is ?Scan RGB?.
I don't get the pop-up window by following the above. I've tried reinstalling the software.

Dear Snakehead.
SilverFast SE doesn?t support scanning in LAB color space. That?s why you don?t get the popup over the scan button.
I talked with our documentation team yesterday and the responsible person told me that there is no such section in the current documentation for SE.
Are you sure that you are reading SE documentation?
Best regards
